It was only after half of the egg plant were already eaten that I realized I had'nt taken a photo of the finished product, hence the skimp-i-ness of the breaded eggplant in the phot below. They were very good and not at all bitter.....sometimes they have a bitey-bitter taste, but not these one....Yippee for the fruits of my labor coming to fruitation with their eatability. Tomorrow or the next day the first of my seed planted tomatoes, will be ripened and ready for picking. It's time to keep a salt shaker in the garden to enjoy home grown tomatoes right there, on the spot.
