Pickled Bell Peppers and Tomatoes in Bread and Butter Pickle Juice + Sunflowers

I love the bread and butter pickle juice
recipe I've found
so Now I pickle anything I can with it.
These are Tomatoes and Bell Peppers
in Bread and Butter Pickle Juice.

2 c. vinegar

2 c. boiling water

1 tsp. mustard seed

1 tsp. celery seed

1/2 tsp. turmeric

1 1/2 c. sugar

Squash on The Half Shell Filled With Stir Fried Veggies

When life gives you squash
and a lot of it, you best find
yourself a good squash recipe
and learn how to make it.

1 large acorn squash, halved and seeded

1 cup water

3 tablespoons butter, melted

1/2 to 1 teaspoon lemon juice

1/2 teaspoon cinnamon

2 tablespoons cup brown sugar, firmly packed

1 large Granny Smith apples peeled, cored, chopped

1/4 cup chopped nuts of your choiceHeat oven to 350 degrees F.

Place acorn squash, cut side down, in a large baking pan or dish; pour water into bottom of pan around the squash. Bake 20 minutes. Remove from oven.

Meanwhile, in a bowl, combine butter, lemon juice, cinnamon, brown sugar, and chopped apples. Divide mixture evenly among partially cooked squash and return to oven for 30 minutes or until tender when flesh is poked with a fork. Sprinkle with chopped nuts to serve.

I modified the recipe that called for apples and nuts
added to a butter and cinnamon sugar juice to include
stir fry veggies instead of the apples and nuts.

It was good.....not to mention squash halves
can really fill ya up.

Yeah Yeah I know it's not acorn squash, but so what. It was good, that's all I know.

The Peppers From the Garden
 Which Make GreatVegetarian Stuffed Peppers

6 med. green peppers

2 c. cooked rice

1 lg. egg, slightly beaten or 1/4 c. Eggbeaters

1 c. chopped onion

1 sm. can tomatoes or 1 (10 oz.) can Rotel tomatoes

1 tbsp. vegetable oil

1 c. bread crumbs or wheat germ

1 1/4 c. grated Cheddar cheese

Cut off tops of peppers and remove and discard seeds. Dice tops, discarding stems, and mix all ingredients, reserving 1/2 cup cheese. Stuff peppers and place in a round microwave casserole. Put extra filling around peppers. Peppers should fit tightly. Cover with plastic wrap, piercing 4-5 times for vents. Microwave on High 15 minutes. Sprinkle with reserved cheese. Cover; let stand 2-3 minutes. Then serve. This dish can be made ahead and frozen for later use. Do not cook until after thawed.

I modified this recipe and parboiled the peppers, added some tuna, and cooked them at 350 in the oven for 30 minutes
and they were yummy.
